Buttermilk brownies

18838871_1542683915773131_4318566349932143003_nWe shared a video of these yummy brownies on our Facebook page and we absolutely had to try making them ourselves. Not only did they work out extremely well, but we took the batch to our meeting and they went down a storm! To make these scrumptious treats at home, simply follow this recipe.

Ingredients

For the brownies:

  • 115g unsalted butter
  • 120ml canola oil
  • 400g granulated sugar
  • 2 large eggs
  • 60g buttermilk
  • Half teaspoon vanilla extract
  • 250g plain flour
  • 1 teaspoon bicarbonate of soda
  • 25g unsweetened cocoa powder
  • Half teaspoon kosher salt
  • 175g chocolate chips

For the frosting:

  • 115g unsalted butter
  • 120g buttermilk
  • 25g unsweetened cocoa powder
  • 500g icing sugar
  • 500g chocolate chips

Method

  1. Preheat oven to 200c and line a 13×9″ baking tin with greaseproof paper. Set to one side.
  2. For the brownies, in a small saucepan over medium high heat, combine the butter and oil. Bring to a boil, then remove from heat.
  3. In a large mixing bowl, combine granulated sugar, eggs, buttermilk and vanilla, then slowly whisk in the butter mixture. Add in flour, bicarbonate of soda, cocoa powder and salt, and stir just until combined. Fold in the chocolate chips.
  4. Pour the mixture into the prepared baking tin and bake for 20 minutes. Remove from oven and allow to cool in the tin.
  5. While the brownies are cooling, begin making the frosting. In a small saucepan, combine the butter, buttermilk and cocoa powder. Whisk over a medium heat until mixture begins to boil. Remove and set to one side.
  6. In a mixing bowl, combine the icing sugar with the butter mixture. Beat for several minutes until smooth. Pour over brownies and sprinkle immediately with chocolate chips. The brownies don’t need to be completely cooled for this step!
  7. Pop the brownies into the fridge for around two hours until set before cutting into squares or bars.

These are a rather naughty treat, but they’re so mouthwateringly moreish that it’s hard to say no! You’ve definitely got to try them out for yourself!
